Malay haddock dish

  • 2
    onions, sliced into rings
  • oil
  • 2
    large ripe tomatoes, peeled and finely chopped
  • 1
    cooked rice
  • 3
    pieces haddock
  • 250
    frozen peas (optional)
  • salt and freshly ground black pepper to taste
  • 2
    hard-boiled eggs, shelled and sliced


Sauté the onion in a little oil until soft. Add the tomato and simmer until a purée is formed. Mix the tomato and onion purée with the cooked rice and set aside. Cook the haddock in a little water until done and it flakes easily with a fork. Add to the rice mixture and mix lightly. Boil the peas in a little water and mix with the rice mixture. Season with salt and pepper to taste. Spoon onto a serving platter. Slice the hard-boiled eggs and arrange on top. Serve hot with a salad. Serves 4.
