Macaroni pizza pie

    elbow macaroni
  • 2
    cans anchovy fillets, drained

    clove garlic, crushed

    medium-sized onion, chopped

    whole tomatoes, chopped

    chopped fresh basil
  • (0.5 t) dried basil

    tomato paste
  • salt and freshly ground black pepper to taste

    grated cheese

    tomato slices
  • black olives to taste

Boil the macaroni in lightly salted water until done. Soak the anchovy fillets in milk for 30 minutes and rinse well. Halve lengthwise. Heat the oil and sauté the garlic and onion until tender. Add the tomatoes, basil, tomato paste and seasoning. Cover and simmer slowly for 20 minutes. Remove from the stove plate. Spoon half the macaroni into an ovenproof dish. Spoon the tomato mixture on top and cover with the remaining pasta. Sprinkle the cheese on top and arrange the anchovy fillets in a diamond pattern on top of the cheese. Place a slice of tomato in each diamond and finish with black olives. Bake for about 30 minutes until heated through. Serves 4.
