Ingredients (9)

Fruity Sauce: apricots, peeled
410.00 g apricots
200.00 g gooseberries
125.00 ml apple juice
30.00 ml orange juice
60.00 ml sugar
Chicken: chicken breasts, skinned
125.00 ml macadamia nuts — ground
60.00 ml parmesan cheese — grated
250.00 ml breadcrumbs — white, dried
60.00 ml butter — melted

Method:

Sauce

Purée the fruit in a food processor
or press through a sieve. Mix the
purée with the remaining sauce
ingredients and simmer until the
sauce thickens.

Chicken

Preheat the oven to 180 °C. Wash
the chicken breasts and pat dry.
Combine the nuts, cheese and
breadcrumbs in a bowl. Dip each
chicken breast in the butter, then
roll it in the nut mixture. Place the
breasts in a small ovenproof dish
and bake for 40-45 minutes or until
golden brown. Serve immediately
with the sauce.
