Likahare (Mixed offal)

  • 1
    mixed offal (tripe, intestines, lungs etc)
  • 2
    vegetable stock cubes
  • 500
    hot water
  • 2
    onions, sliced
  • salt and pepper to taste


1. Clean offal thoroughly and rinse in cold running water. 2. Bring stock to the boil and add meat. Cook gently until tender, about two hours. 3. Remove from sauce and slice thinly. 4. Add onions to sauce, return meat to sauce, season and simmer for 30 minutes. 5. Serve warm on nyekoe (see recipe) and moroho or spinach.
