Stylish bread pudding

    croissants or hamburger rolls
  • 70
    g
    almond flakes, toasted
  • 12
    dates, finely sliced
  • 125
    ml
    desiccated coconut
  • 125
    ml
    sugar
  • 500
    ml
    milk
  • 4
    eggs
  • 5
    ml
    vanilla essence
  • grated zest of 1 orange and/ or lemon
  • 45
    ml
    grated zest of 1 orange and/ or lemon
 

Method

30-40 minutes
 

Preheat the oven to 180°C. Grease an ovenproof dish.

1. Break the croissants or rolls into chunks and arrange half in the bottom of the dish.

2. Mix the almonds, dates and coconut and sprinkle half over the bread. Sprinkle half the sugar over. Repeat the layers.

3. Whisk the milk, eggs, vanilla essence and citrus zest and pour over the bread mixture. Allow to soak in for 20 minutes.

4. Sift the icing sugar over and bake for 30-40 minutes or until the egg mixture is set.

5. To serve: Serve with  the minted yoghurt or custard.
