Mexican flame-grilled chicken

Ingredients

  • 1
    whole chicken, spine removed and spatchcocked
  • MARINADE
  • 125
    ml
    each olive oil and water
  • handful of fresh coriander, chopped
  • handful of fresh parsley, chopped
  • 2
    garlic cloves, chopped
  • 5
    ml
    each dried chilli flakes and salt
  • 15
    ml
    each ground cumin and coriander
  • 5
    ml
    salt
 

Method

marinating: 2-3 hours / braaing: 30-35 min
 

Keep a folding braai grid handy.

1. Put the chicken in a non-metal marinating dish.

2. Marinade: Mix all the ingredients. Set aside 60ml (¼c) of the marinade and pour the rest over the chicken. Cover and marinate in the ridge for 2-3 hours or overnight.

3. To braai: Prepare a braai fire with enough coals to braai the chicken. Put a metal stand in the coals. Transfer the chicken to the grid and braai high above the coals for 30-35 minutes or until done.

4. Cut the chicken into portions and serve with the reserved marinade as a sauce
