Hearty beef pie

    potjiekos or stewing beef

    amasi
  • 4
    garlic cloves, bruised

    celery sticks, roughly chopped
  • 4
    carrots, roughly chopped

    bay leaves

    flour

    beef stock

    ml
    each ground cumin and coriander
  • 2,5
    ml
    cayenne pepper

    water

    roll puff pastry

    egg yolk lightly whisked

Method

1½ hours
 

Keep a pie dish or oven-proof dish handy.

1. Season the meat well with salt and freshly ground pepper. Transfer to a marinating dish and pour the amasi over. Tuck the garlic in between the meat pieces and mix everything well. Cover and marinate overnight in the fridge.

2. Filling: Heat the oil in a deep saucepan or pot and fry the onions and garlic until fragrant. Add the celery, carrots and bay leaves and stir-fry for 5 minutes.

3. Remove the meat from the marinade and add to the veggies in the pot. Sprinkle the flour over and mix well.

4. Pour in the stock and add the spices. Add the water and bring to the boil.

5. Cook the meat slowly for 1 hour or until the meat is tender. Remove from the heat and discard any bones. Season with more salt and freshly ground pepper if you like.

6. Pie: Preheat the oven to 200°C. Transfer the pie filling to the pie dish or oven proof dish and cover with the puff pastry. Lightly brush the egg mixture over the pastry. Cut a slit in the top and bake for 25-30 minutes or until the pastry is golden brown and done
