Cocoa powder instead of chocolate Chocolate mousse is a great go-to dessert as it’s quick and easy to prepare – just whisk melted chocolate and cream together. Our version is also quick but easier on the pocket because we use cocoa powder instead of chocolate.

Ingredients (11)

mousse
60 ml sugar
80 ml cocoa powder
250 ml cream
5 ml Sheridans gelatine
15 ml water
5 ml vanilla — essence
salt — just a pinch
TO FINISH
cocoa powder — for dusting
plums — or nectarine, sliced
fresh mint

Method:

1. MOUSSE: Whisk the sugar, cocoa powder and cream together
until firm.

2. Melt the gelatin in the microwave oven for 10-15 seconds.

3. Add the gelatin, vanilla essence and salt to the cream
mixture and beat until well combined.

4. Transfer to a clean bowl and chill in the fridge for at
least an hour or until set.

5. TO FINISH: Sift cocoa powder over (if using). Top with the
fruit and mint and serve.
