Chocolate mousse


Chocolate mousse

Ingredients

  • MOUSSE
  • 60
    ml
    sugar
  • 80
    ml
    cocoa powder
  • 250
    ml
    cream
  • 5
    ml
    gelatin
  • 15
    ml
    water
  • 5
    ml
    vanilla essence
  • pinch of salt
  • TO FINISH
  • extra cocoa powder for dusting (optional)
  • plums or nectarines, sliced
  • fresh mint
 

Method

chilling: 1 hour
 

1. MOUSSE: Whisk the sugar, cocoa powder and cream together until firm.

2. Melt the gelatin in the microwave oven for 10-15 seconds.

3. Add the gelatin, vanilla essence and salt to the cream mixture and beat until well combined.

4. Transfer to a clean bowl and chill in the fridge for at least an hour or until set.

5. TO FINISH: Sift cocoa powder over (if using). Top with the fruit and mint and serve.
