Lamb riblets with Moroccan spices

Ingredients (14)

250 ml orange juice
lemon — zest only
lemon — juice only
fresh mint — chopped
1 fresh ginger — grated
2 garlic — cloves, finely chopped
1 Tbs brown sugar
1 Tbs dry coriander — roasted
1 tsp cloves
1 tsp cinnamon — ground
1 tsp cloves — ground
1 pinch salt and freshly ground black pepper
pinch dried oregano
1-2 Tbs honey — runny

Method:

Mix together the orange and lemon juice with the zest, mint, ginger, garlic and brown sugar. Marinate the riblets in the mixture for at least 2 hours. In the meantime, make the spice mix.

Grind the spices, salt and pepper and organo together in a pestle and mortar. Rub onto the meat before cooking.

Preheat the oven to 200°C and place the ribs on a roasting rack in a roasting tray( letting the fat drip off ensures crispy ribs) and roast in the oven until done- about 30-35 minutes.

Baste with the marinade during roasting. Just before you remove them from the oven, drizzle the honey over the ribs and place back in the oven for one or two minutes.
