Kingklip with vegetable topping

  • 4
    kingklip steaks
  • salt and freshly ground black pepper
  • 2
    small potatoes, sliced and boiled until tender
  • 1
    small onion, sliced into rings
  • 1
    red OR green OR yellow pepper, seeded and diced
  • 1
    red chilli, seeded and finely chopped
  • 5

    olive oil
  • freshly chopped parsley

Preheat the oven to 180 ºC (350 ºF). Spray a baking sheet with non-stick spray. Season the fish with salt and freshly ground black pepper on both sides and arrange on the baking sheet. Arrange the potato, onion and pepper on top of the fish. Mix the chilli, coarse salt and olive oil and mash to form a paste. Brush the vegetables and fish with the mixture and bake for 10 minutes, uncovered. Switch on the oven grill and grill for 5-10 minutes or until the vegetables are nicely browned and the fish is done. Garnish with parsley. Serve immediately with a green salad. Serves 4.
