Jam tartlets

  • 400
    frozen shortcrust or puff pastry, thawed
  • 250
    good-quality raspberry jam


Preheat oven to 200 ºC. Roll out pastry to 3 mm thick on a lightly floured surface. Cut out 12 rounds, each 10 cm in diameter, and place in greased hollows of a patty pan baking sheet. Spoon jam into pastry shells and decorate with leftover pastry. Bake for 15 minutes, or until pastry is golden. Cool slightly in pans, then remove and cool to room temperature on wire racks.
