Instant noodles with vegetables

  • 1
    onion, finely chopped
  • 2
    cloves garlic, crushed
  • oil
  • 2
    potatoes, peeled and diced
  • 2
    large, ripe tomatoes, skinned and finely chopped
  • 250
    frozen vegetables
  • salt and freshly ground black pepper
  • 15

    lemon juice
  • 170
    instant noodles (Two minute noodles)


Sauté the onion and garlic in a little oil until tender. Add the potatoes and tomatoes and simmer until the potatoes are tender. Add the vegetables and seasonings and simmer until done. Pour boiling water over the noodles, leave until soft and drain well, or prepare according to the instructions on the packet. Spoon the vegetables over the noodles and serve. Serves 3-4.
