Insalata caprese

    large ripe tomatoes, sliced
  • 250
    mozzarella cheese, sliced
  • 20
    basil leaves
  • 1
    red onion, sliced
  • 2
    sun-dried tomatoes, chopped and soaked in
  • 15
    olive or sunflower oil
  • 15
    toasted pine nuts
  • 12
    black olives
  • 45
    olive oil
  • salt and black pepper


Arrange the tomato and mozzarella slices and basil leaves on a large platter or on 4 individual plates.
Scatter the onion rings, sun-dried tomatoes, pine nuts and olives on top and drizzle with the olive oil.
Season with salt and black pepper and serve at room temperature.
