Indian tortilla

    potatoes, boiled, peeled and diced

    oil for frying
  • 1
    onion, finely chopped
  • 10
    medium hot curry powder
  • 5

    clove garlic, crushed
  • 30
    coriander leaves, finely chopped
  • salt and freshly ground black pepper
  • 6
    eggs, beaten


In a large frying pan, heat 30 ml oil and sauté the onion until transparent. Add diced potatoes and garlic, and cook until golden. Stir in the curry powder, paprika, salt, pepper and coriander. Cook for a minute. Pour the beaten eggs into the pan. Stir once or twice, then leave until just set. Continue cooking under a preheated grill to brown. Loosen with a palette knife and slide out onto a plate, cut into wedges and sprinkle with coriander leaves.
