Ice cream sandwiches

  • 8
    large biscuits of your choice; for example, brandy snaps, chocolate chip cookies
  • 400
    ice cream, any flavour, or frozen yoghurt


Set out 4 biscuits on a clean working surface. Divide ice cream into 4 and place a quarter on each of the biscuits. Top with remaining biscuits and flatten gently to make 'sandwiches'. Freeze until the ice cream is firm, then serve. To store for longer, wrap each sandwich in plastic wrap before freezing. They will keep for about a week in the freezer.
