Hot Takamaka goat's milk cheese

  • 2
    shallots or small onions, chopped
  • 60
    white wine
  • 10
    fresh cream
  • 1
    pinch thyme flowers
  • 75
    goat's milk cheese
  • flaky pastry
  • 1
    egg yolk for glazing


Place shallots, white wine, fresh cream and thyme in a heavy-based pan. Leave to reduce for about 15 minutes. Place goat's milk cheese in an ovenproof porcelain dish and top with sauce. Brush edges of dish with egg yolk and cover with a thinly rolled out layer of flaky pastry. Place in a preheated 200 ºC oven and bake for 12 minutes. Serve immediately, while pastry is still puffed up. TOTAL KILOJOULE COUNT: 2 075 kJ (495 Cal).
