Ingredients (10)

18.00 chicken — wings
oil — for frying
MARINADE
125.00 ml sugar
80.00 ml vinegar
30.00 ml soy sauce
SAUCE
80.00 ml water
60.00 ml honey
45.00 ml hoisin sauce — or char siu sauce
2.00 ml fresh ginger
SERVING
lettuce — shredded

Method:

Cut the wings at the joints, discard the tips keeping the two remaining pieces. MARINADE: Mix all the ingredients, pour over the wings and leave to marinate for a few hours. Remove the chicken, drain and fry in a little oil over a medium heat for about 3 minutes on each side to brown.
SAUCE: Heat the reserved marinade ingredients with the water, add the remaining sauce ingredients and stir together. Add the chicken and cook for about 25 minutes. Remove the chicken and cook the sauce further until it becomes syrupy. Pour the sauce over the chicken wings. Serve on a bed of lettuce.
