Healthy bones lunchbox

  • Berry smoothie
  • 1 handful raspberries
  • 1 handful blueberries
  • 2 handfuls of strawberries handfuls of strawberries
  • 1 banana
  • 30 ml honey
  • 300 ml low-fat milk
  • 300 ml vanilla sorbet
  • Cheddar and corn muffins
  • 125 ml oil
  • 250 ml buttermilk
  • 2 extra-large eggs
  • 500 ml self-raising flour
  • pinch salt
  • 250 ml grated mature Cheddar cheese
  • 250 ml drained whole-kernel sweetcorn
  • 15 ml chopped parsley
  • 2 ml freshly ground black pepper

For this lunch box we're going to make a delicious berry smoothie with low-fat milk and vanilla sorbet rich in calcium and whip up an extremely easy cheesy muffin to go with it for a delightful lunch.

Berry smoothie
Combine all the ingredients in a food processor and blend until smooth. It makes about 2 litres. Pour into flask to with the lunchbox and store the rest in the refrigerator.

Cheddar and corn muffins
Preheat oven to 180 C and grease 18 muffin-tin hollows with non-stick spray. Mix the oil, buttermilk and eggs. Sift the flour and salt together and add to the egg mixture. Add the cheese, sweetcorn, parsley and black pepper and mix lightly. Spoon the batter into the prepared tin and bake for 15 minutes or until done. Place this with an apple in a lunchbox and you have a perfect lunchbox!
