Ingredients (4)

mixed vegetables — seasonal
sunflower oil
garlic — cloves, crushed
salt and freshly ground black pepper

Method:

Place raw vegetables on the rack of a roasting pan.
Season sunflower oil with whole peeled or crushed garlic, salt and milled pepper.
Brush vegetables with seasoned oil and grill for about 3 minutes.
Turn, brush with oil and grill for a further 3 minutes.
Repeat the process if the vegetables are not cooked; they should be crunchy but not raw.
Some will blacken slightly, but that’s all part of the plan.
