Grilled sardines

  • skewers
  • 1
    sardines, frozen or fresh, cleaned and gutted
  • 3
    large lemons
  • bay leaves
  • olive oil
  • 1
    lemon, juice
  • sea salt

Soak skewers to prevent burning. Wash and dry sardines and then skewer them with slices of lemon and bay leaves. Baste with olive oil and lemon juice. Grill under a preheated grill or over a fire, preferably in a grid, and cook for about three minutes on each side. Scatter with sea salt and serve immediately with fresh crispy bread and salad.
