Ingredients (8)

700.00 g salmon — or trout fillets
fresh chillies — 573
salt and freshly ground black pepper — to taste
GREMOLATA
45.00 ml fresh Italian parsley — chopped
15.00 ml fresh sage — chopped
4.00 garlic — cloves, crushed
3.00 lemons — zest only
45.00 ml green peppercorns

Method:

GREMOLATA: Mix all ingredients well. Refrigerate until required.
Place fish on a baking sheet, drizzle olive oil over and season. Grill for 3 to 5 minutes on each side.
Top with gremolata and serve with parsley mashed potatoes (see recipe).
