Grilled oysters with chorizo butter

    oysters - opened
  • 75
    soft unsalted butter
  • 75
    chorizo - chopped
  • small bunch of flat parsley
  • 2
    garlic cloves - finely chopped
  • 2
    pinch of curry powder
  • grated zest of half a lemon
  • Salt and pepper to taste


Place the parsley, butter, garlic and a pinch of curry powder in a food processor and pulse until the parsley is completely ground down.

Season with salt and pepper and the lemon zest. Beat in the chorizo. Set in the fridge in a container until firm.

Dice the butter into small pieces ready for the oysters.

Place the oysters on a bed of coarse salt and add a small piece of butter on top of each oyster.

Place them under a hot grill for 2-3 minutes or until the oyster starts to get firm. Make sure the oysters are fully cooked as warm raw oysters do not taste great.
