Grilled chicken with apricot glaze

  • 6
    chicken pieces
  • 5
    fresh apricots
  • 15
    brown sugar
  • 25
    Worcestershire sauce
  • 25
    light soya sauce
  • 10
    freshly grated ginger
  • 2
    dried crushed chillies (optional)
  • 15
    tomato paste
  • 1
    clove garlic, crushed


30 to 40 minutes
Place the chicken pieces in a greased roasting dish and bake in a preheated 180 °C oven for 20 minutes.
Remove from oven and cover with glaze.
Glaze:Place the apricots in a saucepan and just cover with water.
Bring to the boil and boil for two minutes.
Remove from the heat, drain and cover with cold water.
Remove the skins and pips.
Purée in a food processor.
Pour the glaze over the chicken pieces and cook over medium coals on the braai for five to 10 minutes on each side or until cooked though.
Baste with leftover marinade while cooking.
Alternatively, grill the chicken pieces under a medium-hot grill until cooked through.
Serve warm with salads or grilled veggies.
