Grilled chicken caesar salad

  • 4
    chicken breast fillets
  • salt and ground black pepper

    grated Parmesan cheese
  • 10
    Dijon mustard
  • 10
    olive oil

    Worcestershire sauce

    clove garlic, crushed

    chicken stock
  • 5
    anchovy paste (optional)

    cos lettuce, washed and dried
  • cherry tomatoes


Preheat grill or griddle pan. Season chicken with salt and pepper. Cook for 4 to 5 minutes per side, or until done. Meanwhile, blend cheese, mustard, oil, Worcestershire sauce, garlic and 1/4 cup stock until smooth. Add remaining stock (and anchovy paste, if using) and purée. In a large bowl, toss lettuce with the dressing. Divide lettuce and tomatoes between 4 plates. Thinly slice grilled chicken crossways and arrange on lettuce.
