Ingredients (11)

4.00 chicken breast fillets
salt and freshly ground black pepper
15.00 ml parmesan cheese — grated
10.00 ml Dijon mustard
10.00 ml fresh chillies — 573
5.00 ml Worcestershire sauce
1.00 garlic — cloves, crushed
250.00 ml stock — chicken
5.00 ml anchovy paste
250.00 g lettuce — cos

Method:

Preheat grill or griddle pan. Season chicken with salt and pepper. Cook for 4 to 5 minutes per side, or until done.
Meanwhile, blend cheese, mustard, oil, Worcestershire sauce, garlic and 1/4 cup stock until smooth. Add remaining stock (and anchovy paste, if using) and purée.
In a large bowl, toss lettuce with the dressing. Divide lettuce and tomatoes between 4 plates. Thinly slice grilled chicken crossways and arrange on lettuce.
