Green vegetable stir-fry with pumpkin seeds

Cut green beans into 2 cm lengths. Blanch broccoli florets and green beans in a saucepan of boiling water for 2 minutes, then drain. Heat oil in a frying pan. Add broccoli, beans, pepper, spring onions and garlic, and stir-fry over a high heat for 3 minutes. Add spinach and stir-fry for a further 2 minutes. Add sherry, soy sauce, pumpkin seeds and seasoning to taste. Stir-fry for 1-2 minutes, until the vegetables are cooked. Serve with baked potatoes or on a bed of brown rice. Serves 4.
