Greek style olive and feta topped fish

Ingredients (8)

6.00 olives
22.00 ml fresh Italian parsley — chopped
0.00 feta cheese — reduced fat, crumbled
125.00 ml breadcrumbs
15.00 ml fresh oregano
0.00 salt and freshly ground black pepper
2.00 white fish
3.00 tsp tomatoe paste — or low-fat mayonnaise

Method:

Preheat oven to 200 degrees, with the baking tray in the oven. Mix olives, parsley, feta and breadcrumbs together.

Season to taste. Spread the fleshy top of the fish fillet with tomato paste or mayo. Dip the fish into the crumb mixture to create a rustic topping. Chill if time allows.

Bake on baking tray for 12 to 15 mins or until fish is cooked through and the topping is crispy.
