Greek style olive and feta topped fish

  • 6
    depipped olives,finely chopped
  • 22
    chopped Italian parsley
  • a half disc reduced-fat feta cheese, crumbled
  • 125
  • 15
    fresh oregano
  • salt and milled pepper
  • 2
    firm (sustainable) white fish fillets
  • 3
    tomato paste or low-fat mayonnaise


Preheat oven to 200 degrees, with the baking tray in the oven. Mix olives, parsley, feta and breadcrumbs together.

Season to taste. Spread the fleshy top of the fish fillet with tomato paste or mayo. Dip the fish into the crumb mixture to create a rustic topping. Chill if time allows.

Bake on baking tray for 12 to 15 mins or until fish is cooked through and the topping is crispy.
