Greek cookies

  • 250
    soft butter
  • 100
    icing sugar, sifted
  • 10

    vanilla essence
  • 240
    cake flour
  • 2
    ground cloves
  • 100
    chopped almonds
  • extra icing sugar (optional)


Preheat the oven to 180 ºC (350 ºF). Spray two baking trays with non-stick spray. Cream and butter and icing sugar until soft and creamy. Add the water and vanilla essence and beat well. Sift the cake flour and cloves together and add to the butter mixture by the spoonful, mixing well after each addition. Add the almonds and mix by hand to form a soft, manageable dough. Drop spoonfuls onto the prepared baking tray or roll into walnut-sized balls. Bake for 12-15 minutes or until pale brown on top. Roll the hot cookies in icing sugar immediately after removing from the oven, if desired. Arrange on a wire rack to cool completely. Roll the cooled cookies in icing sugar again and store in an airtight container. Makes 45 cookies.
