Ingredients (10)

225.00 g goat's milk cheese — low fat
110.00 ml fresh chillies — 573
15.00 ml fresh parsley — basil and oregano
1.00 garlic — cloves
2.00 ml dried chilli flakes
1.00 lemon — zest and juice
350.00 g cherry tomatoes
125.00 g lettuce
125.00 g rocket
1.00 red onion

Method:

Slice cheese and arrange in a shallow dish greased with 15 ml oil.

Blend herbs, garlic, chilli, lemon juice and rind and remaining oil in a food processor. Pour over cheese, chill and marinate for 2 hours.

Toss remaining ingredients in a bowl and season. Add marinated cheese, toss gently and serve with fresh wholewheat bread.
