Goat's milk cheese and tomato crunchies

  • 2
    crisp white rolls
  • 1
    large ripe tomato, sliced and sprinkled with a little sugar
  • 125
    goat's milk cheese
  • 8
    black olives, stoned
  • 2
    chopped thyme
  • 5
    olive oil
  • milled black pepper to taste


Halve and toast rolls. Top each with tomato, cheese and olives. Place under grill for 2 minutes or until golden. Sprinkle with a little freshly chopped thyme, drizzle over olive oil and season with pepper. Serve immediately. TOTAL KILOJOULE COUNT: 2 730 kJ (650 Cal). A portion: 1 365 kJ (325 Cal).
