Glazed chicken drumsticks with sweet potato

Ingredients (8)

0.00 oranges — grated zest
300.00 ml orange juice — fresh
4.00 garlic — cloves
120.00 ml honey
50.00 ml soy sauce
30.00 ml sunflower oil
8.00 chicken — drumsticks
4.00 sweet potatoes

Method:

Mix together orange zest, juice, garlic, honey, soy sauce and oil.

Place drumsticks in a greased ovenproof dish. Pour three-quarters of the sauce over the drumsticks and turn to coat well. Cover dish with aluminium foil.

Slice sweet potatoes into 2cm-thick pieces. Lay them on a greased baking tray. Brush with remaining sauce.

Bake chicken and potatoes in a preheated oven for 30 minutes. Turn
over potato slices and brush with
sauce halfway through cooking.

Remove aluminium foil from the chicken and continue cooking for 15 minutes or until chicken is cooked through. Remove potatoes from the oven as soon as they are tender.

Allow chicken and potatoes to cool. Arrange potato slices and chicken pieces on a platter and drizzle with any remaining sauce. Refrigerate until ready to serve.
