Garlic Chicken

    olive oil for shallow-frying

    skinned chicken breasts, cubed
  • 5
    salt and freshly ground black pepper

    garlic cloves, crushed
  • 5
    dried oregano
  • 5
    dried mixed herbs
  • 60
    brown vinegar


Heat a little olive oil in a heavy-based frying pan. Season the chicken cubes to taste with salt and pepper and fry in batches until just golden brown all over. Remove from the pan and set aside.

Melt the butter in the pan. Add the garlic and stir-fry for a few minutes over medium heat.

Return the chicken to the pan and add the herbs. Season with salt and pepper if necessary.

Cover and braise for a few minutes. Add the vinegar just before serving and heat through to allow the flavours to blend. Serve with pasta or rice and a mixed salad.
