Game chine over the coals

  • 1
    game chine, such as springbok
  • bacon rashers, mushrooms, canned-oysters, if preferred and grated Cheddar cheese
  • salt and black pepper


Halve the chine lengthwise, but do not cut all the way through. Arrange bacon rashers, sliced mushrooms and oysters if desired on top and sprinkle with cheese. Fold and secure with string at 1 cm intervals. Season with salt and pepper to taste and cook slowly over the coals until golden brown and just done. Serve with instant mushroom or piquant sauce.
