Fried tomatoes with tarragon

  • 30
    olive oil
  • 500
    mixed red and yellow cherry tomatoes
  • 15
    fresh tarragon, finely chopped
  • salt and freshly ground black pepper


Heat the olive oil in a pan and fry the cherry tomatoes and tarragon until the tomatoes are warmed through, and the skins are just about to burst. Season with salt and freshly ground black pepper. Serve hot with fresh bread rolls and extra olive oil if desired.
