Fried peppers

  • 2
    red peppers
  • 2
    yellow peppers
  • 65
    olive oil
  • 2
  • 5
    fresh rosemary leaves


Remove the seeds and white membrane of the peppers and cut the flesh into fairly thick strips. Heat the oil in a fairly large pan until very hot. Add all the pepper strips at once and fry rapidly, shaking the pan a few times until the colour of the peppers deepens. Reduce the heat immediately, add the herbs and salt and cover the pan. Heat for another 10-15 minutes over low heat until tender. Serve hot or cold. Spoon the remaining peppers into a clean glass bottle, cover with olive oil and store until needed.
