Fried brie in a nut crust

    brie, sliced into wedges
  • 85
    pecan nuts, finely chopped
  • 85
    walnuts, finely chopped
  • 85
    almonds, finely chopped
  • 35
    sesame seeds
  • 2
    extra-large eggs
  • 60
    fresh cream
  • oil For deep-frying


Place the brie wedges in the freezer for about 30 minutes. Combine all the nuts that have been finely chopped with the sesame seeds. Beat the eggs and the cream together and remove the cheese wedges from the freezer. Dip each piece into the egg-cream mixture, making sure that they are completely coated. Press the nut mixture onto the cheese wedges. Place on a plate and chill for at least 45-50 minutes until very cold. In a large saucepan, heat enough oil for deep-frying. Fry cheese wedges until golden brown all over. Drain on paper towelling to remove excess oil. Serve immediately. Serves 2-4.
