Fresh herb and butter sauce

    ml
    good-quality dry white wine
  • 25
    ml
    lemon juice
  • 200
    g
    butter, diced
  • 30
    ml
    chopped mixed fresh herbs (thyme, dill, parsley, sage, basil and tarragon)
  • 1
    tomato, cut into quarters, seeded and thinly sliced
 

Method

 
Bring wine and lemon juice to boil in a stainless-steel saucepan. Whisk in butter, one piece at a time. Remove saucepan from heat as soon as it threatens to boil. Add herbs and tomato, stir and pour over fish.
