Fragrant rice salad

    Basmati rice

    cinnamon sticks
  • 6
    whole cloves
  • 10
    cardamom pods, crushed
  • 2
    onions, chopped
  • 2
    green chillies, sliced
  • 25
    freshly grated ginger
  • 10
    ground turmeric
  • 6
    courgettes, sliced and fried
  • 2
    tomatoes, chopped
  • 1
    can red kidney beans, drained

    Bulgarian yoghurt
  • 50
    freshly chopped mint

Heat the oil in a large saucepan. Sauté the onions for 30 seconds, then add the spices, chillies and ginger. Continue to cook for a further minute, then add the rice. Add 1 litre of water and bring to the boil. Reduce heat, cover and allow to simmer until all the water has been absorbed and rice is tender. Set aside to cool. Remove cinnamon stick and cloves. Stir in all remaining ingredients and serve garnished with fresh mint. Serves: 4 Preparation time: 15 minutes Cooking time: ± 15 minutes
