Festive wraps

    prepared pancakes or flour tortillas
  • 30

    mushrooms, finely sliced
  • 60
    white wine
  • 250
    thick cream
  • 200
    leftover ham, finely chopped
  • 4
    chives, chopped
  • 15
    wholegrain mustard

Keep the pancakes warm.
Melt the butter and sauté the mushrooms until done.
Add the wine and bring to the boil.
Simmer until the wine has nearly evaporated, then add the cream.
Bring to the boil and simmer gently until the sauce thickens slightly.
Add the ham, heat through and remove from the heat.
Add the chives and mustard.
Divide the filling among the pancakes and roll them up.
Serve two pancakes or tortillas per person with a salad on the side as a main course.
Any leftover meat, such as a combination of turkey and ham, can be used.
Add a little celery for extra flavour and crunch.
For a low-fat variation omit the cream, heat the mushrooms, wine, ham, chives and mustard together and simmer until the wine has evaporated.
Remove from the heat and stir in one container (200 g) low-fat smooth cottage cheese.
