Fave ofegats (Stewed broad beans)

    olive oil
  • 1
    large onion
  • 6
    cloves garlic (use more if desired)
  • small bunch fresh thyme and dried bay leaves
  • 1
    broad beans, shelled or whole
  • sea salt and milled pepper to taste
  • 125
    smoked ham, diced


Heat half the olive oil in an earthenware casserole dish or roasting pan and gently cook onion, garlic and herbs until caramelised. If they dry out too much, add a little water.
Add beans and simmer for 8 to 10 minutes. Add a little water and season. Add ham and remaining olive oil.
Shake pan to mix ingredients and cook for 1 to 2 minutes. Serve on heated plates.
