Ingredients (12)

1.00 onion — large, chopped
2.00 garlic — cloves
3.00 carrots — chopped
3.00 celery — stalks and leaves, chopped
1.00 chicken — whole, skinned
125.00 ml wine — white
3.00 Litres stock — chicken
5.00 ml sugar
1.00 bay leaves
0.00 salt and freshly ground black pepper
250.00 ml rice — basmati
0.00 fresh herbs

Method:

Place all ingredients except rice in a large pot and bring to the boil.
Cover, reduce heat and simmer slowly for about an hour.
Adjust seasoning and cook for a further 30 minutes.
Twenty minutes before serving add rice and cook until done.
Stir in fresh herbs and serve.
