Fat-free chicken and rice soup

  • 1
    large onion, chopped
  • 2
    cloves garlic
  • 3
    carrots, chopped
  • 3
    celery stalks, including leaves, chopped
  • 1
    whole small chicken, skin removed
  • 125
    white wine
  • 3
    chicken stock
  • 5
  • 1
    bay leaf
  • salt and milled pepper
  • 250
    basmati rice, soaked and rinsed
  • fresh herbs of your choice


1 hour 30 minutes

Place all ingredients except rice in a large pot and bring to the boil.
Cover, reduce heat and simmer slowly for about an hour.
Adjust seasoning and cook for a further 30 minutes.
Twenty minutes before serving add rice and cook until done.
Stir in fresh herbs and serve.
