Fast calamari

    tomatoes, drained and diced

    chilli flakes

    onion, diced
  • 24
    black olives, stoned
  • 60
    olive oil
  • 1
    small lemon, grated peel
  • handful fresh basil leaves
  • 600
    sliced calamari tubes
  • 4
    thick slices country-style bread
  • crushed garlic
  • olive oil


Combine canned tomatoes, sugar, chilli flakes, onion, olives, olive oil, lemon peel and basil in a saucepan and cook over moderate heat for about 30 minutes, or until thickened and very little liquid remains. Add calamari and cook for 2 to 3 minutes, or until calamari is opaque (do not cook for longer, or the calamari will be tough). Cool. BRUSCHETTA: Brush bread with crushed garlic and olive oil and toast on both sides. Serve with calamari.
