Easy hedgehogs

    day-old loaf of white bread
  • 750
    ml
    sugar
  • 375
    ml
    water
  • 250
    ml
    cocoa
  • 30
    ml
    butter
  • 5
    ml
    vanilla essence
  • 750
    ml
    coconut
 

Method

 
Slice the bread into 3 cm thick slices and remove the crusts. Cut each slice into 3 cm cubes. Store in an airtight container. Mix the rest of the ingredients, except the vanilla essence and coconut, in a saucepan and heat over moderate heat until the sugar dissolves. Bring to the boil and boil for 1 minute. Remove from the heat and add the vanilla essence. Dip the bread cubes in the chocolate syrup mixture and roll in the coconut. Cool on a wire rack and store in airtight containers. Makes 40 hedgehogs.
