  • 1
    round white bread roll
  • 1
    tin tomato, onion and green pepper mix
  • 2
    large eggs
  • 125
    grated cheese of your choice


Cut the roll in half and remove most of the bread from inside the halves.
Heat the tomato mix in a frying pan and allow to simmer gently.
Carefully break the eggs into the mixture and poach for a few minutes until cooked as preferred.
Scoop the eggs and sauce into the bun halves.
Sprinkle with the grated cheese of your choice. Season to taste and serve immediately.
