Avocados develop a bitter taste if overexposed to heat, so ensure the oil is hot enough so you can deep-fry the avocado wedges rapidly. Stone and skin an avocado. Slice into six wedges and roll in cake flour. Dip in beaten egg and then in flour mixed with sesame seeds. Shake off the excess flour and deep-fry in well-heated oil until pale brown and crisp on the outside. Drain on paper towelling and serve with a tangy chilli sauce.
