Dark chocolate and cherry truffles

    good-quality dark chocolate (50% to 60% cocoa)

    softened butter
  • 55
    cherries, chopped (soaked in Kirsch, if you prefer)
  • cocoa powder or chopped nuts, to coat


Chop the chocolate into small pieces and place in a bowl.

Bring the cream to the boil and pour it over the chopped chocolate, then wait for two minutes. Stir gently to combine.

Blend the butter and the chopped cherries into the chocolate and cream mixture. Place in the fridge until firm.

Roll into small balls, then roll each ball in cocoa or chopped nuts until evenly coated.
