Crusty mini pizzas

    self-raising flour

    cloves garlic, crushed

    melted butter

    marinated sun-dried tomatoes, sliced

Preheat oven to 200 ºC. Place the flour in a bowl and rub in the butter until mixture resembles fine breadcrumbs. Add milk and lemon juice and mix lightly to form a soft dough. Divide into 4 pieces and roll each into a 12 cm circle. Press the edges with your fingertips to neaten them and place on a greased baking tray. Mix together the origanum, garlic and melted butter and brush on to the pizzas. Top with the sun-dried tomato slices, olives and cheese. Season to taste with salt and freshly ground black pepper. Bake in the oven for 15 minutes, or until pizzas are well risen and golden. Serves 4.
