Crunchy blackberry fool

    biscotti or amaretti biscuits
  • 175
    blackberries, or other berries in season
  • 300
    low-fat Bulgarian yoghurt
  • 30
    icing sugar
  • 150
    cream, whipped
  • fresh mint, to garnish


Reserve 8 biscuits. Put the rest in a food processor and blend until crushed. Reserve 8 blackberries and add the rest to the mixture in the processor, along with the yoghurt and icing sugar . Blend for 10 seconds. Stir in the cream. Pour the mixture into 4 serving glasses, then cover and chill for at least 2 hours. Serve with the reserved biscuits and decorate with the remaining berries and a sprig of mint. Serves 4.
