Crispy pesto goat's cheese

  • 2
    goat's cheese crottins
  • 15
  • 125
    white bread crumbs


Preheat oven to 200degrees, with the baking tray in the oven, as you want to cook the cheese on a preheated tray to maximise crisping.

Coat sliced goat's cheese with a thin layer of pesto. Season breadcrumbs. Dip cheese into breadcrumbs to coat.
Cook under a preheated grill for 3-4 minutes to crisp crumbs and slightly melt cheese.
Serve with rocket leaves tossed in a light vinaigrette dressing and Melba toast.
