Creamy egg roll baskets

  • 6
    square Italian (ciabatta) rolls
  • olive oil spray
  • 10

    fat-free cream cheese
  • 65
    chives, chopped finely
  • salt and milled pepper
  • 12
    slices Parma ham


15 minutes
Preheat oven to 180 @degC.
Halve rolls and remove part of the dough to create a cavity.
Spray with olive oil and bake for about 10 minutes until inside is crisp.
Whisk eggs, cream cheese, chives and seasoning together in a bowl.
Heat olive oil in a pan and slowly cook eggs until creamy and just set.
Spoon into rolls, top with Parma ham and serve with steamed asparagus.
