Creamy cottage cheese icing

  • 250
    low fat cottage cheese
  • 1
    orange, grated rind
  • 25
    fresh orange juice
  • 1
    small sachet granular sweetener


Mix all the ingredients for the icing and spread over Sugar-free carrot cake (see recipe). If desired, cut the cake in half and spread some of the icing on the bottom half before sandwiching the two halves together.
